Ingredients

  1. 15 pitted Deglet Noor dates
  2. five dried apricots
  3. 1 cup chopped carrot
  4. 1 cup chopped walnuts
  5. ⅓ cup unsweetened coconut flakes
  6. ¼ cup toasted almond butter
  7. 2 tablespoons flax seed meal
  8. 1 ½ teaspoons floor cinnamon
  9. ½ teaspoon floor ginger
  10. ¼ teaspoon floor nutmeg
  11. ½ teaspoon vanilla extract
  12. 1 pinch salt

Directions

Combine dates and apricots in a small measuring cup or bowl. Add sufficient hot water to cowl and allow fruit to soak for 15 minutes to melt.

Drain dates and apricots and upload to the bowl of a meals processor. Add carrots, walnuts, coconut flakes, almond butter, flax meal, cinnamon, ginger, nutmeg, vanilla extract, and salt. Pulse, scraping down the sides frequently, until aggregate comes together to form a by and large easy, sticky dough, five to 7 mins.

Scoop out tablespoon-sized balls of dough using a lightly greased tablespoon degree. Roll into balls with lightly greased fingers.
