Ingredients

  1. 2 teaspoons olive oil
  2. 3 tablespoons finely chopped onion
  3. 1 (15.5 ounce) can black beans, tired and rinsed
  4. 1 (10 ounce) can complete kernel corn, drained
  5. ¼ cup salsa
  6. 1 tablespoon brown sugar
  7. ¼ teaspoon crimson pepper flakes
  8. 2 tablespoons butter, or as wished
  9. eight (8 inch) flour tortillas
  10. 1 ½ cups shredded Monterey Jack cheese

Directions

Heat olive oil in a large saucepan over medium warmth. Cook and stir onion in hot oil till softened, about 2 minutes. Stir in beans and corn, then upload salsa, brown sugar, and purple pepper flakes; mix properly. Cook till heated thru, approximately 3 mins. Remove from warmness.

Melt approximately 1 ½ teaspoons butter in a huge skillet over medium heat. Place a tortilla inside the skillet. Sprinkle with ¼ of the Monterey Jack cheese, then top with ¼ of the bean combination. Place another tortilla on top; cook till the lowest is golden, then carefully flip and cook until the other aspect is golden. Repeat with closing tortillas and filling.
