Ingredients
- four oz farfalle pasta
- 2 cups sparkling broccoli florets
- 2 tablespoons unsalted butter
- half cup heavy cream
- three/four cup freshly grated Parmesan cheese (see Note)
- half teaspoon minced garlic
- 1 pinch ground nutmeg, or to taste
- salt and freshly ground black pepper to flavor
- sparkling parsley sprigs for garnish (non-compulsory)
Directions
Bring a big pot of lightly salted water to a boil. Cook farfalle pasta at a boil, stirring occasionally, until tender yet firm to the chew, approximately 12 minutes. Remove to a colander; reserve the pasta water for later use.
Add broccoli to a microwave-safe box along side 1/four cup water. Cover and cook dinner on High until bright green and gentle with a chew, approximately four minutes. Drain; season with salt. Keep heat.
Meanwhile, soften butter in a skillet or saucepan over low warmth. Stir in cream and permit to simmer, stirring regularly, three to four minutes.
Add cheese and garlic, stirring continuously, until cheese is melted. Stir in nutmeg and dispose of from warmness. Sauce is simply too thick, stir in a bit of reserved pasta water. Season to taste with salt and pepper.
To serve, integrate cooked pasta, cooked broccoli, and sauce. Garnish with clean parsley sprigs, if favored.
